2016 Whimwood Chardonnay - Single Vineyard
100% Nannup Chardonnay was pressed straight to French oak of which 30% was new for fermentation. The yeasts indigenous to the vineyard were allowed to weave their magic and ‘voila’, we have a wine of great character that would sit comfortably alongside some of the finest Burgundy can offer. Crisp fresh pear, zesty citrus, spicy oak assault the senses, all you need is to imagine you are in the dusty barrel halls of Meursault. A medium bodied wine with a bright crimson colour which shows aromas of fresh plum and ground coffee with a chocolate twist. The palate shows flavours of raspberry and blackberry fruits with a hint of Grandma's custard. The wine finishes with balanced tannin and is well suited to age for up to 10 years. This full bodied Shiraz was produced from 100% Nannup fruit. The fruit was allowed to ferment naturally then macerate on skins for 21 days to extract all the natural colour and tannins possible. This has produced a wine with dark berry fruit and floral aromas with subtle spice and toasty oak characteristics.
