Sparkling Wines2019 Whimwood Sparkling Chardonnay "Blanc de Blanc"
The grapes for this refreshing sparkling Chardonnay were carefully handpicked, carted to the winery and then gently pressed to barrel for natural fermentation. The base wine remained on lees for 6 months before the barrels were racked to tank and then filtered in readiness for the Tirage process. Following fermentation, the wine remained on Lees for a further 19 months before disgorging. Once poured the wine has a fine persistent bead with aromas of freshly baked brioche and citrus blossom. Flavours of lemon curd and granny smith apples abound and leave a balanced refreshing finish. A delightful wine to be enjoyed on any occasion. Blanc de Blanc “white from whites” has exclusively used hallmark Whimwood Estate Chardonnay to make this sparkling brut wine in the “méthode traditionnelle”, minimum 22 months Tirage (2nd fermentation in the bottle). 2020 Whimwood Chardonnay - Single Vineyard
An intoxicating return to our more familiar style, this wine a little plumper than the 2019 and has a little more oak influence. Again the fruit was hand picked and sorted with care then transported to the winery where the whole bunches were gently pressed to a combination of 1/3 new and 2/3 2nd and 3rd use French oak barriques. The juice was allowed to naturally ferment in the barrels then mature for 10 months prior to bottling. Delicate aroma's of spicy French oak mingle with scents of orange blossom and a hint of toasted nuts. The flavours of white nectarine and citrus gently merge with a spicy vanilla texture and results in a wine with lovely balance that can be cellared with confidence for 5 - 7 years. A slight departure from our usual style, this wine has more racey citrus elements than seen inprevious wines. The fruit was again handpicked, although about 7 days earlier than other years, and delivered to the winery in pristine condition to begin its journey to become wine. Pressed straight to 33% new French oak with the remaining 67% second and 3rd use French oak, the juice slowly commenced a natural Fermentation. The wine remained in these barrels to mature for 10 months then racked to tank for bottling. Complex bouquet of lightly toasted nuts and lemon rind with a hint of brioche. Intense flavours of lemon curd and creamy vanilla oak. A wine of great length with impeccable balance. 100% Nannup Chardonnay was pressed straight to French oak of which 30% was new for fermentation. The yeasts indigenous to the vineyard were allowed to weave their magic and ‘voila’, we have a wine of great character that would sit comfortably alongside some of the finest Burgundy can offer. Crisp fresh pear, zesty citrus, spicy oak assault the senses, all you need is to imagine you are in the dusty barrel halls of Meursault. 2021 Whimwood Rosé
Our lovingly cared for Shiraz grapes were hand picked at optimum ripeness to produce this dry, crisp Rosé. The whole bunches were crushed and de-stemmed then pressed to extract the bright vibrant juice which was then fermented in old French oak to produce this delicious Rosé. The resulting wine has aromas of fresh strawberries and raspberries with a hint of lavender intertwined with flavours of candied cherries and fresh Satsuma plums and finishes with a dry crisp tang. A fine medium bodied Shiraz from the Blackwood Valley region, the wine is a bright red colour with a tinge of purple. Aroma's of mulberry and raspberry along with delicate lightly toasted oak sing from the glass and lead the way toward a palate of fresh plums and, aforementioned, berries which is layered with oaky mocha, fine tannins and a balanced refreshing finish. The fruit was carefully handpicked and sorted then carted to the winery where the fruit was crushed and de-stemmed then cold soaked prior to fermentation. The must was pressed to 1/4 new and 3/4 older French oak barrels after 14 days on skins and matured for 10 months prior to bottling. The must was pressed to 1/4 new and 3/4 older French oak barrels after 14 days on skins and matured for 10 months prior to bottling. Beautiful aromas of Mulberry and Blackberry underpinned with intricate layers of spice and toasty oak and hints of good old vanilla. Tasting delivers everything the nose suggests with the dark berry flavours and perfectly integrated oak well supported by gentle but persistent tannins. A great depth of rich burgundy colour lead to aromas of black cherry with a subtle whiff of freshly ground coffee and a sense of minerality. Tasting shows more of the delicious dark fruit flavours of blackberry and other dark berries like mulberries.
